Today I wanted to make something extra green, but something more than a green smoothie. I recently purchased an abundance of fresh herbs so I decided pesto was the way to go.
This pesto has many different herbs in it which makes it super flavorful. I also used pistachios instead of the traditional pine nuts to make it unique. With parsley, cilantro, basil, oregano, AND scallion, this might just be one of my favorite pesto recipes ever. That’s a big statement.

Serves: 1 cup
Ingredients
- Handful fresh parsley, stems removed
- Handful fresh cilantro, stems removed
- Handful fresh basil, stems removed
- 4 Tbsp fresh oregano leaves
- 1 sprig scallion, end trimmed
- ⅓ cup raw pistachios
- Juice of 1 lime
- 1 tsp salt
- ½-2/3 cup extra-virgin olive oil
Instructions
- Process all ingredients (except olive oil) in food processor until herbs have broken down. Turn the food processor back on and stream in olive oil until a creamy consistency is reached.
