That’s it! 4-ingredients is all you need to build a delicious pasta bowl.
You’re probably wondering, “Is pasta healthy?” Well, it can be!
This bowl in particular uses a pasta that is grain-free, gluten-free, and full of protein and fiber. It’s chickpea and lentil based from a company called Chickapea. I always have it stocked in my pantry for a quick dinner. And the taste + texture is Italian girl approved!
For the sauce, I usually prefer to make my own. HOWEVER, Rao’s Homemade makes a wonderful bottled marinara sauce with super clean ingredients. Most store-bought marinara sauces contain added sugar, but Rao’s doesn’t which is why I feel confident using this as a way to save time in the kitchen. You will love it!
And you know, a meal is not a meal without some greens! Squeeze some fresh lemon juice over everything for a fresh kick to your pasta bowl.
This meal could not get any easier!
- 1 box (8 oz.) Chickapea Pasta, or other gluten-free pasta of choice
- 12 oz. Marinara Sauce
- 4 cups arugula
- Juice of 1 lemon
- Himalayan pink salt + black pepper
- Bring a large pot of water to boil.
- Once boiling, salt the water and add in your noodles.
- Boil the noodles for about 7 minutes until cooked to the consistency of your liking - I like these noodles a little al dente!
- Drain your pasta, pour it back into your pot and add your marinara sauce.
- Mix well and put into bowls with arugula.
- Squeeze fresh lemon juice over top and sprinkle with black pepper.
- Enjoy!
