Clinical Nutritionist. Personal Chef. Meal Prep Master. Wellness Author.
Hi, I’m Lauren! But my friends call me LV.
I’m a used-to-be Oreo lover turned fruit and veggie fanatic. Green juice is my coffee and I never tire from talking about nutrition. I love being outdoors, but can’t stand bugs and the only planning I do in my life is related to grocery lists and what I’m going to eat next.
So if figuring out what foods to eat and planning your meals is as dreadful as waiting in line at the DMV, then I’m totally your girl.
I know that you’re “so done” with feeling like crap everyday, bloating so much that your pants barely button, and confused as heck about all these different diet trends bopping around, right? Well, good news, you’re right where you need to be.
Because I GET IT.
I spent most of my life struggling with my health. Doctors said I “looked healthy” so they didn’t take me seriously, and it took almost losing my life to finally turn things around. If you want that crazy life-story, you can read about that here.
But to give you the cliff notes version for context, at 19 I was diagnosed with three autoimmune diseases: Celiac Disease, Hashimoto’s Thyroiditis, and Psoriasis. At 20 years old, I almost lost my life to Toxic Shock Syndrome. I went from a collegiate-level dancer to a weak and frail 20 year old with no answers or direction from my doctors. I was frustrated - to say the least.
With no guidance from the ‘professionals’ I became my own health advocate and started researching nutrition. Ignoring any structured diet, I focused on fresh, REAL food. I consumed lots of green juice, smoothies, fruits, veggies, and complex carbohydrates like quinoa. These were my power foods. Within 6 weeks of juicing everyday and eating real food, my health was changed forever - I had energy again, tons of mental clarity, and I was getting stronger day by day. I went back to college (against doctor’s orders) and changed my major to nutrition. Three focused years and gallons of green juice later, total body nourishment was born. My journey led me here - to help YOU go from bloated and tired to light and energized with a body that works with you instead of against you.
But why should you listen to me?
Besides the priceless life experience I received with my own health struggles, I received my (not-priceless) Bachelor of Science degree at San Diego State University in Nutrition & Dietetics. I also attended the Institute for Integrative Nutrition where I became certified as a Holistic Health Coach. My education is the perfect blend of science-based nutrition with holistic application.
Did you know that you deserve to feel amazing?
Waking up sluggish with no energy isn't supposed to be your norm. You may think that because diets have failed you in the past or because you are overwhelmed with your health that it will always be that way. It’s not true! You are in control of your health and I’m here to help you. Remember: I have not one, not two, but three autoimmune diseases. And I’m happy to say that I have not taken one immunosuppressant drug to manage those diseases. It’s ALL FOOD. Your diet has the power to heal you or to harm you. Which are you going to choose?
“Let food be thy medicine and medicine be thy food”. -Hippocrates
But it’s not enough to figure out what to eat - applying it into your daily life is the hard part, right? The mornings are hectic, the day gets busy, and by the time evening comes, you’re too tired to cook.
I am a Clinical Nutritionist, but I’m also a Personal Chef. I have mastered meal planning, meal prepping, and grocery shopping to make it the most efficient part of your life. But I know what you’re thinking, “Meal prep? Sounds boring.” Don’t worry, you won’t be eating bland chicken and broccoli with me. It’s healthy food that tastes so satisfying, you don’t even realize you’re eating healthy! In fact, evidence has shown that I can turn any bacon lover into a vegetable craver.
But if you don’t believe me, download my free Energy Boosting Meal Plan to see for yourself.
So now you know what I do, but those who know me best know that:
- I’m a mom to two beautiful girls named Rylie and Andie!
- I can eat (and thoroughly enjoy) a bowl full of beets anytime of day.
- I don’t do formal workouts because I tell myself abs are made in the kitchen - but really.
- Jesus is my constant source of strength and hope ‘cause let’s be honest - life is HARD sometimes. I don’t know about you, but I can’t do it alone!
And if you don’t want to navigate your health alone, you don’t have to. Learn all the ways we can work together so I can support you on your own journey to total body nourishment.
Until then, I’ll be drinking green juice, making meal plans, and having a dance party in my kitchen with my daughter while we cook. So grab a green juice with me, put on your favorite tunes, and join me on this beautiful journey called life.
