One day I opened my fridge and realized I had an abundance of carrots. I also had a bulb of fennel. Out of that discovery came the wonderful ‘Carrot Fennel Explosion’. It’s a refreshing juice that is a little sweet with a touch of tang.
But the flavor isn’t the only benefit of this juice. Fennel is an ingredient most people wouldn’t think of to use in a juice, but it’s loaded with Vitamin C and phytonutrients that reduce inflammation! Fennel is cooling to the body and very soothing on the digestive tract as well.

- 8 organic carrots
- 1 organic granny smith apple, cored
- 1 bulb fennel
- Juice of 1 lemon
- 1" piece of ginger root
- Wash and prep the fruits and vegetables. In a juicer, juice the carrots, fennel, apples and ginger. Add the juice of one lemon. Drink immediately or store in an airtight mason jar no longer than 24 hours.
