There’s nothing better than indulging in a treat that you know is good for you. Healthy fats from the coconut will nourish your brain and protect your cells. Mixed with a little bit of almond flour, these macaroons are gluten-free and also dairy-free! This is a recipe you can feel good about.

Ingredients
- 2 cups unsweetened shredded coconut
- ½ cup almond flour
- 1 cup coconut butter, softened
- ½ cup full-fat coconut milk
- 3 Tbsp. raw honey
- Juice and zest of 1 lemon
- Juice and zest of 1 lime
- 1 tsp. lemon extract
- Pinch of Himalayan pink salt
Instructions
- Preheat oven to 275 degrees F.
- Line a baking sheet with parchment paper.
- In a medium sized bowl, mix shredded coconut, almond flour, lemon zest, lime zest, and salt.
- In a separate bowl, mix coconut butter, coconut milk, honey, lemon juice, lime juice, and lemon extract.
- Pour the wet ingredients into the dry ingredients and stir gently until all ingredients are incorporated together.
- Use a tablespoon and scoop out mixture to form ping-pong ball sized macaroons. Roll together in your hands to make sure the macaroon holds together. Place on baking sheet.
- Repeat process until you get 21 even-sized macaroons.
- Bake for about 30 minutes until macaroons are lightly golden on top.
- Let macaroons cool for 15-20 minutes before serving.
- Store in the refrigerator.
