Ingredients
  • 1 box (8 oz.) Chickapea Pasta, or other gluten-free pasta of choice
  • 12 oz. Marinara Sauce
  • 4 cups arugula
  • Juice of 1 lemon
  • Himalayan pink salt + black pepper
Instructions
  1. Bring a large pot of water to boil.
  2. Once boiling, salt the water and add in your noodles.
  3. Boil the noodles for about 7 minutes until cooked to the consistency of your liking - I like these noodles a little al dente!
  4. Drain your pasta, pour it back into your pot and add your marinara sauce.
  5. Mix well and put into bowls with arugula.
  6. Squeeze fresh lemon juice over top and sprinkle with black pepper.
  7. Enjoy!
