Stone fruit season is one of my favorites.
Nectarines, apricots, peaches… I could eat them for days.
Normally I eat these fruits raw because they are THAT good and don’t need any adulteration.
BUT, I was feeling adventurous with some organic peaches I bought one day and I came up with something wonderful. Sweet, tangy, salty, crunchy, and creamy… this recipe has it all.
If you don’t make these you are seriously missing out. Just sayin’ 🙂
Honey Roasted Peaches with Goat Cheese & Pecans

Serves: 8 peach halves
Ingredients
- 4 organic ripe but firm yellow peaches, halved and pitted
- ½ cup honey
- ¼ cup white wine vinegar
- Juice of 1 lemon
- ¼ tsp. ground cinnamon
- ¼ tsp. Himalayan pink salt
- TOPPINGS:
- ¼ cup chopped pecans
- 4 Tbsp. goat cheese, crumbled
- ¼ tsp. ground cinnamon
- Honey
Instructions
- Preheat the oven to 250 degrees F.
- In a small bowl, whisk the honey, vinegar, lemon juice, cinnamon, and salt together until mixed.
- Arrange peaches cut side down in a medium-sized baking dish and pour honey mixture over the peaches.
- Cover the dish with aluminum foil and roast for 20 minutes.
- After 20 minutes, remove the foil, flip the peaches over, and spoon the pan juices over the fruit.
- Continue roasting for an additional 20 minutes, uncovered.
- Peaches should be soft but still hold their shape when finished.
- Remove peaches from the oven and let cool for about 5 minutes. Once they have cooled a bit, arrange peaches cut side up on a plate.
- Sprinkle chopped pecans, cinnamon, and goat cheese on all 8 peach halves. Drizzle with honey to finish.
- Best served immediately.
