Italian-Style Yams & Onions

Ingredients
- 2 large garnet yams, washed and cubed
- ½ yellow onion, diced
- 2 Tbsp coconut oil, melted
- 1½ Tbsp balsamic vinegar
- 1 tsp Himalayan pink salt
- 1 tsp Italian seasoning
- 1 tsp dried parsley
- ½ tsp black pepper
- 2 Tbsp fresh basil leaves, chopped
Instructions
- Preheat the oven to 425 degrees F.
- Line a large baking sheet with parchment paper.
- Add chopped yams and onion to baking sheet. Drizzle with coconut oil and balsamic vinegar. Add seasonings (except fresh basil) and toss everything together until yams and onions are evenly coated.
- Bake everything in the oven for approximately 32-35 minutes until yams are slightly crispy on the outside and onions have caramelized.
- Lastly, top the yams and onions with the fresh basil before serving.
