I’ve been making this salad dressing for years. It’s SO simple and has a nice tangy bite that a vinaigrette should have.
Bonus: there are only 6 ingredients (including S & P!) and absolutely zero sugar.
Toss with greens, use as a dressing for a tomato/cucumber/red onion salad, marinate chicken, or mix with quinoa… the possibilities for this versatile dressing are endless. And that’s why it’s my favorite!

Serves: 2 cups
Ingredients
- 1 cup extra virgin olive oil
- ½ cup + 2 Tbsp. raw apple cider vinegar
- 1 Tbsp. good-quality yellow mustard
- 1 Tbsp. Italian seasoning
- 2 tsp. Himalayan pink salt
- Black pepper, to taste
Instructions
- Whisk together all dressing ingredients until it begins to emulsify.
- Store in a mason jar in the refrigerator for up to one week.
Notes
This dressing will solidify a bit in the fridge, so make sure to let the dressing sit at room temperature for 5-10 minutes before using.
