I wanted an evening drink that I could sip on that wasn’t tea, but still had medicinal properties to it. This Nourishing Vegetable Broth is EVERYTHING you could ever want in an evening sipper.
It’s enjoyable to drink, but the health benefits of it are even more astounding. It’s packed with nutrients from the vegetables and herbs so it’s like straight liquid nutrition. It warms you from the inside out and I don’t know if I will ever go back to boxed broth again.
Speaking of boxed vegetable broth… These ingredients are good, but the flavor is nowhere near a homemade version. Fresh always has the most flavor!
- Pacific Organic: Water, Carrots, Onion, Celery, Leeks, Tomato Puree, Sea Salt, Mushrooms, Garlic, Savory Leaf, Ground Bay Leaf
- Trader Joe’s Organic: Water, Carrots, Celery, Tomatoes, Onions, Leeks, Sea Salt, Garlic, Parsley, Bay Leaves, Thyme
My homemade recipe makes 10 cups, so it’s more than two store-bought boxes combined!
- 3 carrots, roughly chopped
- 2 stalks celery, roughly chopped
- 6 spears asparagus, roughly chopped
- 1 cup shiitake mushrooms
- 2 tomatoes, quartered
- 1 onion, sliced
- 1 cup parsley
- 5 cloves garlic, peeled
- 1" fresh ginger root, peeled
- 1" fresh turmeric root, peeled
- 1 bunch fresh sage
- 1 bunch fresh thyme
- 1 tsp. dulse granules
- 1 tsp. kelp granules
- 8 cups filtered water
- Add all the vegetables and herbs to a large pot. Pour in the water and bring to a boil over high heat. Reduce to a simmer, cover, and simmer on low for 1 hour.
- After the hour is up, turn the heat off and let the broth sit for 5-10 minutes. Strain the broth into a large jar or multiple small jars and discard the veggies, or you can puree them with water for a blended soup.
- Store the broth in the fridge for up to 10 days or you can freeze it for up to 6 months.
If you aren’t into sipping broth like I am, you can use this broth in multiple other ways:
- Liquid for cooking quinoa, rice, or other grains
- As a base for your homemade soups
- To steam or saute veggies
- In homemade sauces
- You can even add it to a smoothie!
