Satisfying, energizing, and tasty! They are gluten-free, grain-free, and vegan.
The coolest thing about this recipe is that it uses tahini. Tahini is a paste made from sesame seeds with a smooth consistency. Peace out almond butter, the sesame seed is the star of the show today.
Sesame seeds are very nutrient-dense. They are 35% protein, and contain antioxidants that promote liver health. Sesame seeds are also great for lowering cholesterol and regulating digestion. Fun fact: the black sesame seeds are the most nutrient-dense!
Tahini, coconut, and pumpkin are the star ingredients of this recipe so you’re getting protein + healthy fat + complex carbohydrates to provide a steady energy in a snack that you will enjoy eating.

- ½ cup Bob's Red Mill Coconut Flour
- 2 Tbsp. melted coconut oil
- ½ cup pumpkin puree
- ¼ cup tahini
- 3 Tbsp. maple syrup
- 2 tsp. cinnamon
- ¼ cup sesame seeds (black, white, or both)
- Pour sesame seeds onto a plate.
- In a mixing bowl, add the coconut flour, coconut oil, and pumpkin puree. Mix to combine.
- Add in the tahini, maple syrup, and cinnamon. Mix well until all the ingredients are incorporated. The mixture will be dry - that's totally fine!
- Roll the dough into balls by picking up some dough, pressing the mixture, and rolling it between your hands.
- Roll the ball in the sesame seeds and set aside.
- Continue process until all the dough is used.
- You should have 12-15 evenly sized balls.
