I love sweet potato. They’re delicious and I am always looking for new ways to eat them. I went for the classic chopped and roasted sweet potatoes but elevated them with a sauce. And it’s so yummy! I could eat this all day everyday.
I made the yogurt sauce with CoYo Coconut Yogurt so it’s vegan and this dish is also gluten-free. Nourishing + healthy + delicious = a win in my book!

Roasted Sweet Potato Bites with Savory Yogurt Sauce (Vegan & Gluten-Free)

Ingredients
- Roasted Sweet Potato Bites:
- 2 sweet potatoes, washed and cubed
- 2 Tbsp coconut oil, melted
- 1 Tbsp Himalayan pink salt
- 1 Tbsp dried parsley flakes
- 1 Tbsp onion powder
- 1 tsp. black pepper
- Savory Yogurt Sauce:
- ½ cup coconut yogurt
- 2 Tbsp. tahini
- 1 garlic clove, minced
- Juice of ½ lemon
- 1 Tbsp. dried basil
- 1 tsp. onion powder
- ½ tsp. Himalayan pink salt
Instructions
- Preheat oven to 400 degrees F.
- Line a baking sheet with parchment paper.
- Wash sweet potato and chop into 1 inch cubes, leaving the skin on.
- Spread the sweet potato cubes evenly on baking sheet and drizzle with coconut oil. Sprinkle with dried parsley flakes, onion powder, salt and pepper to your liking. Mix around with your hands until all the potatoes are coated evenly. Bake for 30-35 minutes or until golden brown.
- Meanwhile, mix all the dressing ingredients together in a small bowl. Pour over the potatoes once you remove them from the oven and mix until the potatoes are coated evenly. Enjoy!
