I could eat sweet potatoes every day. They’re the perfect side dish or snack. I even have them as a meal sometimes! These potatoes are really good with my Detoxifying Vegan Pesto drizzled on top. Yum!
Simply Roasted Sweet Potatoes

Ingredients
- 2 large sweet potatoes, washed and cubed
- 2 Tbsp coconut oil, melted
- 1 Tbsp Himalayan pink salt
- 1 Tbsp dried parsley flakes
- 1 Tbsp onion powder
- 1 tsp. black pepper
Instructions
- Preheat oven to 400 degrees F.
- Line a baking sheet with parchment paper.
- Wash sweet potato and chop into 1 inch cubes, leaving the skin on.
- Spread the sweet potato cubes evenly on baking sheet and drizzle with coconut oil. Sprinkle with dried parsley flakes, onion powder, salt and pepper to your liking. Mix around with your hands until all the potatoes are coated evenly. Bake for 20-25 minutes or until golden brown.
